Take Off Thurs. Chicken Enchiladas June 18th or Saturday June 20th

Our family is headed to the beach in a few weeks
and they have graciously said,
"We do NOT want you to spend the whole trip in the kitchen. We will grill out, eat out, get fresh seafood, ...but we DO have one dinner request... Chicken Enchiladas!"
And I shall make them - and enjoy them myself.
