Oops!

Sorry about the confusion! I'm working on a bunch of things for February, so I had it on the brain. This THURSDAY JANUARY 28, 2010 Take Off Thursday - Confetti Quesadillas!

I can't possibly underestimate the love for Southwestern food! Two of the top three most ordered menus for 2009 were Southwestern: Chicken Enchiladas (1), closely followed by Confetti Quesadillas (2) with Lasagna & Garlic Rolls coming in number 3.
It has been quite awhile since Confetti Quesadillas have been on the menu,
so... how about this week?

"Confetti" Quesadillas

Grilled Shrimp, Baby Spinach, Caramelized Onions & a blend of authentic Mexican cheeses in a large flour tortilla. Served with a dangerously delicious Chipotle Cream Sauce & Fresh Tomato & Corn Salsa
and...Black Bean Soup - Slowly simmered and perfectly seasoned

Soup (appr. 15 oz) 2.00

Please place your order by 10:00 a.m. on Wednesday January 27th.  Pick up is anytime after 12 noon on Thursday January 28th.

Take Off Thursday January 14th

I've been missing those smiling faces on Thursdays!
 This was hands down, one of the most requested meals of last year.

I remember the first time I fixed this meal for my family:
 It was barely Spring and we spent and entire Saturday puttering around in the yard. As the day was ending and the chill returned to the air - we all went inside with our sun-kissed faces... tired and hungry.  We sat down to this meal and we ate and ate until we couldn't take another bite. The combination of flavors is divine!
I need a little bite of Spring right now to help me thaw out.
